Busy Days

I lost my camera this weekend but now it's Tuesday and I have found it! Sadly that means I missed out on the food we had. We had homemade pizza, de-cluttered our living room and kitchen, and played outside with Baby C. He loves loves being outside! Has mastered standing on his own and pulling himself up. He can also fall without needing to be "rescued." T and I had a a great time making our own pizzas. T, being a typical male wanted meat only, he had chicken, ground beef, and pepperoni on his, he loooved it! And asked this be more than once a month. I however made something much more to my liking, I had chicken, broccoli, spinach, and sliced portabello, omg it was amazing! I also made this amazing white sauce. It was kind of thick, I may have used too much Parmesan cheese, it's okay though I wouldn't change it at all.   We live in a small duplex and our living room area is very small and long, making it hard to sit with more than two people comfortably. We changed somethings around and now there is soooo much more room! I am so happy now baby J can can move around and not knock down all my books. I promise the week will include more photos and ribs! My hubby's fav :)

Homemade Pumpkin Soup

This was the first time I have made this soup. Growing up I was no soup fan. My son however loooves the stuff! I am starting to like it more and more as an adult though. I used this recipe and just basically switched out the butternut squash for pumpkin. It was very yummy!! She makes amazing things! Baby J just loved this, he could not get enough. Mr. J kind of liked it but of course didn't want a serving. Oh well more for me and baby!








Pumpkin Soup1 small baking pumpkin, about 3 lbs
1 medium white onion, finely diced
1 Tbsp butter
1/2 cup milk or cream
3 cups chicken broth

1 Cinnamon stick
2 Tbsp brown sugar
dash of nutmeg
salt to taste

Cut pumpkin lengthwise, remove seeds. Place on a roasting pan (sprayed with nonstick cooking spray) cut sides down in 375-degree oven for 45min to 1 hour (flesh should be soft when poked with a fork). Let cool completely. Sauté diced onion in saucepan with butter for 5 min or until onions are clear. Add chicken broth to onions and simmer for 5 min. Add Cinnamon stick to broth. Scoop pumpkin into broth and cook on medium for 20 min. Depending on blender/food processor size, you may need to do two batches: pour saucepan ingredients into blender and puree. Add milk or cream and puree until smooth. Pour pureed soup back into saucepan and reheat. Add brown sugar and nutmeg, stir well. Salt to taste. Recipe yields 6 large servings

Getting Started in 2011

Marriage = check.
Baby = check.

Now what!? We have adjusted to life being married and now having a newborn; it has been very challenging but much much more rewarding!! Life has changed so much in the last year. I hope to use this blog to capture life moments and delicious homemade goodness. I love to cook! anything! Baking is my favorite but I don't do it as much as I would like (mostly so I won't eat it ha ha). I love cooking anything new. I am trying to get Mr. J to try anything I put in front of him. This is a daunting task! At least Baby J eats anything. He is eight months old and everything goes right to the mouth, not just food!!
